African Peanut & Spinach Stew with Sorghum

Sorghum is a well known ingredient in Africa but there are still many people who haven't considered trying it out. Here's a recipe with a great reason to.

Ingredients

½ bunch spinach

½ onion, chopped

3 - 4 Tbsp peanut butter

2 ½ tsp maple syrup (optional)

60 - 100 ml liquid vegetable stock

5 ml grated ginger (optional)

5ml chilli flakes (optional)

1 can beans of choice

1 cup sorghum

Method

Prepare the Sorghum

  1. Rinse 1 cup sorghum with water.
  2. Then put 3 cups of water into a pot. Add the rinsed sorghum and pinch of salt to taste.
  3. Bring the water to a boil and reduce the heat, cover and let the sorghum simmer for 50 ' 60 minutes, until it is soft.
  4. Drain the sorghum and discard any remaining liquid then set it aside.

Prepare the Spinach

  1. Saut' the onions in a bit of oil until translucent.
  2. Add your spinach and saut' for another 3 - 5 minutes.
  3. Mix all the other ingredients in a bowl until everything is integrated.
  4. Add the mixture to the saut'ed onions and spinach.
  5. Add the canned beans of your choice.
  6. Cook for about 5 - 10 minutes.
  7. Remove from the stove and serve with cooked sorghum.
